Restaurant essentials that you don’t have in your home kitchen
by Anthony Bourdain
~ Shallots: always have some around for sauces, dressings & saute items
~ Butter: Margarine? That’s not food. I can’t believe it’s not butter? I can.
~ Roasted Garlic: Few items can taste so many distinct ways, handled correctly.
~ Chiffonaded parsley: sprinkled over or around your plate it’ll give your chow the striking professional touch it’s been missing.
~ Stock: the backbone of good cooking.
~ Demi-glace
~ Cervil, basil tops, chive sticks, mint tops, etc: you need zero talent to garnish food. So why not do it?
