Salmon Cakes with veggie stir fry & white rice.
Salmon Cakes
~ 1/2 lb Salmon, finely cubed
~ 1 egg
~ 1/2 cup panko breadcrumbs
~ 1 tsp ginger paste
~ 1 - 1 1/2 tsp sriracha
Preheat oven to 350 degrees and coat baking dish with olive oil. Mix all ingredients in a small bowl and form into patties. Bake for 20-25 minutes. Serve with Wasabi Ginger Mayo recipe found here:

Double the recipe if you want to make 2 burger size patties.
